applesauce

For two weeks, I have been looking at the nearly 5kg of apples Laurence gave me. I don't have enough confidence to make a tarte tatin yet, but found a good recipe for une compote de pommes, which is a fancy way of saying applesauce. Oh là là, so easy... why haven't I tried it before? Probably because no one has ever given me so many apples from their apple tree. And oh yeah, I forgot that in Oklahoma, I don't cook much.

Here's the recipe:
  • peel 2 kg of apples, slice in to fourths. (I used 7 small apples)
  • place in covered pan and cook for 30 minutes.
  • add 125 g of sugar (this is about 7 or 8 Tbsp, and I used cassonade, or raw cane sugar)
  • stir vigorously with a wooden spoon to mush the apples and dissolve the sugar.
I enjoyed a warm bowl for my afternoon snack. Delicious!
