cordon bleu already?

Less than a week in France, and tonight I managed to make the perfect omelette for dinner. Could it be that I've already perfected my cooking skills since my terribly ugly omelette from a few weeks ago? Sadly, this cannot be the case. A combination of dumb luck and incredibly delicious ingredients helped me make what was, by far, the best omelette I've ever made. Not the best I've ever eaten, mind you, but for me and my meager skills, I'm pretty impressed.

The eggs I used were fresh, brown eggs, very recently from the farm. I know this, because each egg was stamped with the date it was, shall we say, delivered from the chicken herself. Add to that a slice of French ham, a sprinkling of Emmenthal cheese, a touch of French butter to grease the skillet, a bit of salt and pepper, et voilà ! With the omelette, I had a salad of mâche - a lettuce I have only twice been able to find in Oklahoma City - capers, and some French sauce salade. And a bit of baguette, of course. I would have taken a picture to prove its magnificence, but the camera was upstairs with a dead battery, and I didn't want my chef d'oeuvre to go cold.

Tomorrow, I have hopes to make something from the plums I picked in my yard...maybe.

No, it was a lettuce called mâche. Lamb's lettuce in English..
